Oatmeal Cookie Eggless French Toast
Ingredients:
- 5-6 thick slices of dairy-free sourdough bread
- 1 cup of dairy-free oatmeal cookie creamer (or plant milk, I used oatmilk)
- 3 tbsp corn starch
- 2 tsp cinnamon
- 2 tbsps brown sugar (if used plant milk)
- Optional Toppings - Powdered sugar, oatmeal cream cheese glaze
Instructions:
- In a bowl, combine the oatmeal cookie creamer (or plant milk), cornstarch, cinnamon, and brown sugar (if using plant milk and not the creamer). Whisk until all ingredients are blended. Let sit for 5-7 minutes to thicken a bit
- Add 1 tbsp of butter to a non-stick skillet over low/medium heat
- Take your sourdough bread (preferably bread that isn’t fresh and is several days old and a bit firm) and dip each side into the mix (do not drown the bread lol, please)
- Next, add the bread to the skillet and cook on both sides for 2-3 minutes. Repeat for the rest of the bread slices.
- Add powdered sugar and drizzle maple syrup or oatmeal cream cheese glaze over top of the french toast
- Lastly, pat yourself on the back because YOU DID THATTT!
