Oatmeal Cookie Eggless French Toast

Ingredients:

  • 5-6 thick slices of dairy-free sourdough bread
  • 1 cup of dairy-free oatmeal cookie creamer (or plant milk, I used oatmilk)
  • 3 tbsp corn starch
  • 2 tsp cinnamon
  • 2 tbsps brown sugar (if used plant milk)
  • Optional Toppings - Powdered sugar, oatmeal cream cheese glaze

Instructions:

  1. In a bowl, combine the oatmeal cookie creamer (or plant milk), cornstarch, cinnamon, and brown sugar (if using plant milk and not the creamer). Whisk until all ingredients are blended. Let sit for 5-7 minutes to thicken a bit
  2. Add 1 tbsp of butter to a non-stick skillet over low/medium heat
  3. Take your sourdough bread (preferably bread that isn’t fresh and is several days old and a bit firm) and dip each side into the mix (do not drown the bread lol, please)
  4. Next, add the bread to the skillet and cook on both sides for 2-3 minutes. Repeat for the rest of the bread slices.
  5. Add powdered sugar and drizzle maple syrup or oatmeal cream cheese glaze over top of the french toast
  6. Lastly, pat yourself on the back because YOU DID THATTT!
