Easy Cluster Granola

Ingredients:

  • 3 cups of rolled oats
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 1/4 cup walnuts
  • 1/4 cup hemp seeds
  • ¼ cup avocado oil
  • 1/3 cup maple syrup
  • 1/4 cup almond butter
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp salt

Instructions:

  1. Prepare the dry mix: To a bowl, add the rolled oats, sunflower seeds, pumpkin seeds, walnuts, and hemp seeds. Stir to combine.
  2. Prepare the binder: In a second bowl, whisk together the avocado oil, maple syrup, almond butter, vanilla extract, cinnamon, and salt.
  3. Combine and bake: Combine the dry and wet ingredients until everything is coated evenly. Transfer to a parchment lined baking sheet, spread out evenly while firmly packing the mixture into the baking sheet.
    Bake in the oven for 30-40 minutes. Avoid mixing/messing with the granola while it bakes. This will help create clusters
    Let cool for 30 minutes - 1 hour before breaking the granola into chunks.
  4. Storage and use: Store your granola in an airtight container at room temperature for up to 1-2 weeks.
