Lemon Garlic Yogurt Pasta

Ingredients:

  • 1/3 cup of dairy-free unsweetened plain yogurt
  • 2 tsp garlic powder
  • 1 tsp of onion powder
  • 1/2-1 tsp salt
  • 1/4 tsp of ground black pepper
  • 112 grams of chickpea spaghetti
  • 1 1/2 cup of cooked asparagus
  • 1/2 tbsp dairy-free butter
  • 1/2-1 tbsp lemon juice

Instructions:

  1. Cook the spaghetti noodles according to the brand's directions and set aside
  2. Cook the asparagus and season with salt, pepper, and garlic powder. Season to taste
  3. In a bowl, combine the lemon juice (start with 1/2 tbsp and add more after you've tasted the sauce), garlic powder, dairy-free yogurt, onion powder, black pepper, and lemon juice. Taste and make adjustments based on your preferred taste.
  4. Add the butter to a skillet over low-medium heat, followed by the cooked asparagus, spaghetti noodles, and yogurt sauce
  5. Combine everything until it is mixed well and the yogurt sauce is warm/hot
  6. Top with fresh lemon zest
  7. Lastly, pat yourself on the back because YOU DID THATTT!
