Lemon Garlic Yogurt Pasta
Ingredients:
- 1/3 cup of dairy-free unsweetened plain yogurt
- 2 tsp garlic powder
- 1 tsp of onion powder
- 1/2-1 tsp salt
- 1/4 tsp of ground black pepper
- 112 grams of chickpea spaghetti
- 1 1/2 cup of cooked asparagus
- 1/2 tbsp dairy-free butter
- 1/2-1 tbsp lemon juice
Instructions:
- Cook the spaghetti noodles according to the brand's directions and set aside
- Cook the asparagus and season with salt, pepper, and garlic powder. Season to taste
- In a bowl, combine the lemon juice (start with 1/2 tbsp and add more after you've tasted the sauce), garlic powder, dairy-free yogurt, onion powder, black pepper, and lemon juice. Taste and make adjustments based on your preferred taste.
- Add the butter to a skillet over low-medium heat, followed by the cooked asparagus, spaghetti noodles, and yogurt sauce
- Combine everything until it is mixed well and the yogurt sauce is warm/hot
- Top with fresh lemon zest
