Key Lime Chia Pudding

This recipes makes 1 serving. Feel free to double the recipe if using it for meal prep

Ingredients:

  • 2 tablespoons chia seeds (white chia seeds recommended for aesthetic appeal)
  • 1 key lime or regular lime (zest and juice)
  • 1/4 - 1/3 cup dairy-free milk (coconut or soy milk work well)
  • 5.3 oz dairy-free plain or vanilla yogurt (thicker varieties preferred - here is my current go-to [this one])
  • 1/4 teaspoon vanilla extract
  • 1/2 tablespoon maple syrup (optional, for sweetness)

Instructions:

  1. Zest the entire lime and set aside half the zest for topping. Juice the lime.

  2. In a medium bowl small jar for storing, whisk together the dairy-free milk, yogurt, lime juice, half of the lime zest, vanilla extract, and maple syrup (if using) until well combined. Add the chia seeds to the mixture and stir thoroughly to ensure they're evenly distributed.

  3. Cover and refrigerate overnight for best results. If short on time, refrigerate for at least 30 minutes to allow the pudding to set.

  4. Before serving, give the pudding a final stir if needed. Top with granola and the remaining lime zest.

Tip: Add a few chunks of the granola to the pudding before you refrigerate it. By the morning, the granola would have settled into the pudding, which reminds me of pie crust.
