Garlic Butter Mushroom Pasta

Ingredients:

  • 2 1/2 cups of sliced mushrooms
  • 2 cups of cooked pasta
  • 1 1/2 - 2 cups of fresh green vegetables (I used broccoli)
  • 3 tbsps of dairy-free butter
  • 1/4 cup of dairy-free parmesan
  • 2 tbsps of minced garlic
  • 1/2 tbsp of dried parsley
  • 1/2 tsp of dried oregano
  • 1/2 - 1 tsp of salt
  • 1/2 tbsps of garlic and onion herbed spice blend (I found mine at TJ Maxx of you can purchase it from Amazon here)

Instructions:

  1. Cook the pasta according to the package directions. While the pasta cooks, move on to Step two
  2. In a large, non-stick skillet or pot, melt the butter over medium heat
  3. Next, add in the minced garlic,fresh green vegetables, mushrooms, seasonings, and herbs. Cook for 5 minutes
  4. Once the pasta has finished cooking, drain it and add it to the garlic butter mushrooms and veggies. Sprinkle in the parmesan and combine.
  5. Lastly, pat yourself on the back because YOU DID THATTT!
