Extra Creamy Tomato Pasta
Ingredients:
- 4 1/2 cup of cooked pasta (I used penne but use what you prefer or have on hand)
- 1 tbsp of olive oil
- 4 oz of softened dairy-free cream cheese
- 1 1/2 cup of plant milk (I used oat milk but use what you have on hand)
- 6oz of tomato paste
- 1 1/2 tsp of garlic powder
- 1/2 tsp of black pepper
- 1 tsp of salt
- 1 tsp of garlic and onion spice blend (I found mine at TJ Maxx)
- 2 tbsps of pasta water (from cooked pasta)
Instructions:
- Cook the pasta according to the brand directions. Set the pasta and 2 tbsps of the pasta water aside until the sauce has finished
- In a large, non-stick skillet or pot, over medium heat, add the olive oil and softened dairy-free cream cheese. Next, add in the plant milk. With a whisk, stir the cream cheese and milk until smooth. (You may need to use the whisk to break apart the cream cheese so that it combines with the milk more easily)
- Reduce the heat to low and add in the 6oz can of tomato paste. Continue to whisk until creamy and smooth
- Next, add in the seasonings (garlic powder, black pepper, salt, garlic & onion spice blend) and stir. Now add in the 2 tbsps of the reserved pasta water and continue to stir
- Add in the cooked pasta and mix well. Serve with shaved dairy-free parmesan and fresh basil
- Lastly, pat yourself on the back because YOU DID THATTT!
