Extra Creamy Tomato Pasta

Ingredients:

  • 4 1/2 cup of cooked pasta (I used penne but use what you prefer or have on hand)
  • 1 tbsp of olive oil
  • 4 oz of softened dairy-free cream cheese
  • 1 1/2 cup of plant milk (I used oat milk but use what you have on hand)
  • 6oz of tomato paste
  • 1 1/2 tsp of garlic powder
  • 1/2 tsp of black pepper
  • 1 tsp of salt
  • 1 tsp of garlic and onion spice blend (I found mine at TJ Maxx)
  • 2 tbsps of pasta water (from cooked pasta)

Instructions:

  1. Cook the pasta according to the brand directions. Set the pasta and 2 tbsps of the pasta water aside until the sauce has finished
  2. In a large, non-stick skillet or pot, over medium heat, add the olive oil and softened dairy-free cream cheese. Next, add in the plant milk. With a whisk, stir the cream cheese and milk until smooth. (You may need to use the whisk to break apart the cream cheese so that it combines with the milk more easily)
  3. Reduce the heat to low and add in the 6oz can of tomato paste. Continue to whisk until creamy and smooth
  4. Next, add in the seasonings (garlic powder, black pepper, salt, garlic & onion spice blend) and stir. Now add in the 2 tbsps of the reserved pasta water and continue to stir
  5. Add in the cooked pasta and mix well. Serve with shaved dairy-free parmesan and fresh basil
  6. Lastly, pat yourself on the back because YOU DID THATTT!
