Dairy-free Pimento Cheese

Ingredients:

  • 8oz vegan cheddar cheese
  • 8 oz of dairy-free cream cheese
  • 1/4 cup of vegan mayo
  • 4oz diced pimentos
  • 3/4 tsp cayenne pepper
  • 1/2 tbsp garlic powder
  • 1/4 tbsp onion salt
  • 1/4 tsp garlic and onion herb blend (optional - here's the brand I used)
  • 1/4 tsp of salt
  • Pepper to taste

Instructions:

  1. Combine the dairy-free cream cheese, vegan mayo, and vegan cheddar cheese with a hand or standing mixer (if you do not have a mixer, chop the cheese with a knife before mixing and combine with a silicone spatula). Beat until combined well
  2. Next, add in pimentos (including the liquid), and the seasonings. Mix again for 15 seconds
  3. Cover and refrigerate for a minimum of an hour
  4. Serve as a dip, on a burger, in a wrap, on a sandwich, or with toasted bread
