Dairy-free Ranch Dressing - Two Ways!

 

Here is my take on dairy-free ranch - one with a cashew base and the second with a vegan mayo base. Enjoy!

Dairy-free Ranch - Vegan Mayo Based Ingredients:

  • 1 cup of vegan mayo
  • 3/4 cup of milk
  • 1/2 tbsp lemon juice
  • 1/2 tbsp apple cider vinegar
  • 2 tsp dill
  • 1 tsp parsley
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt

Instructions:

  1. Add all of the ingredients to a bowl and mix with a whisk until combined well. The dressing should be creamy
  2. For best flavor, store in an airtight container and chill in the refrigerator for 1 hour or overnight

Dairy-free Ranch - Cashew Based Ingredients:

  • 1 1/2 cup of plain cashews (do not have to be soaked)
  • 1 cup of almond, cashew, or oat milk
  • 1/4 cup of apple cider vinegar
  • 1 tbsp of olive oil
  • 3/4 tbsp of lemon juice
  • 1 1/2 tsp dill
  • 1 tsp parsley
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tbsp apple cider vinegar (optional)

Instructions:

  1. Add the 1 cup of almond milk and 1/4 cup of apple cider vinegar to a bowl. Stir and set aside for 5 minutes
  2. Once the milk and ACV mix has set, add it to a high-speed blender along with the cashews and the 1 tbsp of olive oil. Blend until creamy
  3. Transfer to a mixing bowl and combine with the remaining ingredients. Taste and make adjustments as needed. The dressing should be creamy
  4. For best flavor, store in an airtight container and chill in the refrigerator for 1 hour or overnight
