Dairy-free Ranch Dressing - Two Ways!
Here is my take on dairy-free ranch - one with a cashew base and the second with a vegan mayo base. Enjoy!
Dairy-free Ranch - Vegan Mayo Based Ingredients:
- 1 cup of vegan mayo
- 3/4 cup of milk
- 1/2 tbsp lemon juice
- 1/2 tbsp apple cider vinegar
- 2 tsp dill
- 1 tsp parsley
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
Instructions:
- Add all of the ingredients to a bowl and mix with a whisk until combined well. The dressing should be creamy
- For best flavor, store in an airtight container and chill in the refrigerator for 1 hour or overnight
Dairy-free Ranch - Cashew Based Ingredients:
- 1 1/2 cup of plain cashews (do not have to be soaked)
- 1 cup of almond, cashew, or oat milk
- 1/4 cup of apple cider vinegar
- 1 tbsp of olive oil
- 3/4 tbsp of lemon juice
- 1 1/2 tsp dill
- 1 tsp parsley
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tbsp apple cider vinegar (optional)
Instructions:
- Add the 1 cup of almond milk and 1/4 cup of apple cider vinegar to a bowl. Stir and set aside for 5 minutes
- Once the milk and ACV mix has set, add it to a high-speed blender along with the cashews and the 1 tbsp of olive oil. Blend until creamy
- Transfer to a mixing bowl and combine with the remaining ingredients. Taste and make adjustments as needed. The dressing should be creamy
- For best flavor, store in an airtight container and chill in the refrigerator for 1 hour or overnight
