Chickpea, Veggie, & Pesto Wraps
Ingredients:
- 1 cup of canned chickpeas, drained and rinsed
- 1/2 cup of sliced sweet peppers or bell peppers
- 1/3 cup of sliced red onions
- 1 - 1 1/2 tbsps of olive oil
- 1/3 tsp of salt
- 1/4 tsp of black pepper
- 1 tsp of garlic powder
- 1 tsp of onion powder
- 1/3 cup of water or vegetable broth
- Four large wraps
- Vegan-friendly pesto
- Spinach
- Avocado slices
- Vegan cheese (I used Field Roast Chao slices)
Instructions:
- Heat the olive oil in a skillet over low-medium heat
- Once hot, add in the cleaned chickpeas, sliced onions, and peppers along with the seasonings
- Add in the water or broth and cook for 5-8 minutes. Taste and make seasoning adjustments as needed
- Once the chickpeas, peppers, and onions have finished cooking, assemble the wraps by adding the pesto, spinach, avocado slices, chickpea mix, and vegan cheese
- Serve with your preferred choice of sides and enjoy!
