Chickpea, Veggie, & Pesto Wraps

Ingredients:

  • 1 cup of canned chickpeas, drained and rinsed
  • 1/2 cup of sliced sweet peppers or bell peppers
  • 1/3 cup of sliced red onions
  • 1 - 1 1/2 tbsps of olive oil
  • 1/3 tsp of salt
  • 1/4 tsp of black pepper
  • 1 tsp of garlic powder
  • 1 tsp of onion powder
  • 1/3 cup of water or vegetable broth
  • Four large wraps
  • Vegan-friendly pesto
  • Spinach
  • Avocado slices
  • Vegan cheese (I used Field Roast Chao slices)

Instructions:

  1. Heat the olive oil in a skillet over low-medium heat
  2. Once hot, add in the cleaned chickpeas, sliced onions, and peppers along with the seasonings
  3. Add in the water or broth and cook for 5-8 minutes. Taste and make seasoning adjustments as needed
  4. Once the chickpeas, peppers, and onions have finished cooking, assemble the wraps by adding the pesto, spinach, avocado slices, chickpea mix, and vegan cheese
  5. Serve with your preferred choice of sides and enjoy!
  6. Lastly, pat yourself on the back because you diddddd that!!
