Dairy-Free Berry Sheet Pan Pancake

Ingredients:

  • 1 1/2 cup of flour
  • 3 tsp of baking powder
  • 1/2 tsp of salt
  • 1 tbsp of sugar
  • 1 flaxseed egg (1 tbsp of milled flaxseed + 3 tbsps of water)
  • 1 1/4 cup of plant milk
  • 3 tbsps of melted dairy-free butter
  • 1 cup of frozen fruit

Instructions:

  1. Preheat oven to 375 degrees
  2. Combine flour, baking powder, salt, sugar in a bowl. Next, add in melted butter, flaxseed egg, and plant milk. Next, add in frozen fruit and mix.
  3. Transfer to a small (10 x 6.9 sheet - can be found at Walmart, target, or online) buttered baking sheet and bake for 30 minutes.
  4. Let cool for 5-10 minutes. Serve with maple syrup
