Vegan Creamy Beef Pasta
Ingredients:
- 2-3 cups of cooked pasta
- 2 cups of vegan ground "beef"
- 1/2 cup of softened dairy-free cream cheese
- 1 1/2 cup of plant-based milk
- 2 tbsps of flour
- 3/4 cup of dairy-free white cheese (gouda, mozzarella, etc)
- 2/3 cups of diced green bell pepper
- 2 shallots, sliced
- 2 tbsps of dairy-free butter
- 1 tsp salt
- 1 1/2 tsp of seasoning salt
- 1/2 tsp of pepper
- 1 tsp garlic powder
Instructions:
- Cook pasta noodles according to package instructions. Set aside
- Add the dairy-free butter to a large skillet over medium heat. Once melted, add in the vegan ground beef and cook thoroughly.
- Next, add in the shallots and bell peppers and cook until the vegetables are tender. Sprinkle the flour over the "beef" and vegetables. Stir until the flour is mixed in.
- Next, add in the dairy-free cream cheese, seasonings, and plant milk. Use a fork to break apart the cream cheese.
- Add in the dairy-free cheese and stir. Cover with a lid and let simmer for 10 minutes, stirring occasionally.
- Once finished, add in pasta noodles and serve warm.
