Vegan Creamy Beef Pasta

Ingredients:

  • 2-3 cups of cooked pasta
  • 2 cups of vegan ground "beef"
  • 1/2 cup of softened dairy-free cream cheese
  • 1 1/2 cup of plant-based milk
  • 2 tbsps of flour
  • 3/4 cup of dairy-free white cheese (gouda, mozzarella, etc)
  • 2/3 cups of diced green bell pepper
  • 2 shallots, sliced
  • 2 tbsps of dairy-free butter
  • 1 tsp salt
  • 1 1/2 tsp of seasoning salt
  • 1/2 tsp of pepper
  • 1 tsp garlic powder

Instructions:

  1. Cook pasta noodles according to package instructions. Set aside
  2. Add the dairy-free butter to a large skillet over medium heat. Once melted, add in the vegan ground beef and cook thoroughly.
  3. Next, add in the shallots and bell peppers and cook until the vegetables are tender. Sprinkle the flour over the "beef" and vegetables. Stir until the flour is mixed in.
  4. Next, add in the dairy-free cream cheese, seasonings, and plant milk. Use a fork to break apart the cream cheese.
  5. Add in the dairy-free cheese and stir. Cover with a lid and let simmer for 10 minutes, stirring occasionally.
  6. Once finished, add in pasta noodles and serve warm.
