Broccoli, Dairy-free Cheese, and Rice Casserole

Ingredients:

  • 2 cups of cooked rice
  • 3 cups of cooked broccoli
  • 2 cups of plant milk
  • ¼ cup of Flour
  • 1 ¼ cup of dairy-free cheddar cheese
  • 2 tsp of salt
  • 1 tsp of pepper
  • 2 tsp of onion Powder
  • 2 tsp of chicken-less flavored seasoning
  • 1 tsp of smoked paprika
  • 2 tbsp of dairy-free butter

Instructions:

  1. Preheat oven to 375 degrees
  2. In a bowl, add cooked rice and broccoli. Season with salt and pepper. In a skillet over medium heat, melt dairy-free butter
  3. Add in flour and mix until combined. Next, add in the plant milk. Sprinkle in dairy-free cheese and seasonings. With a whisk, mix until smooth
  4. Pour “cheese sauce” into the bowl of broccoli and rice and combine. Add the mix to a casserole dish and bake for 25 minutes and then broil for 5 minutes
  5. Serve warm!
