Butternut Squash Cheese Sauce

- 1 medium-sized butternut squash
- ½ of a small onion
- 4 garlic cloves
- 1 cup of vegetable broth
- ½ cup of plant-based milk
- 2 tsp of salt
- 1 tsp of black pepper
- 1 tsp of garlic powder
- 4 tbsps nutritional yeast
- 2 tbsp of tapioca flour
- Cooked pasta
Instructions:
- Preheat oven to 375 degrees
- Cube butternut squash and toss with olive oil
- Place sliced onions, peeled garlic cloves, and butternut squash on a baking sheet and bake for 25-30 mins or until the squash is tender
- Add roasted veggies to a blender with the vegetable broth, plant milk, and seasonings
- Once everything is blended, add “cheese” sauce to a pot with the tapioca flour. Stir until the flour is mixed well with the sauce.
- Serve with pasta of choice!
