Butternut Squash Cheese Sauce

 

Ingredients:

  • 1 medium-sized butternut squash
  • ½ of a small onion
  • 4 garlic cloves
  • 1 cup of vegetable broth
  • ½ cup of plant-based milk
  • 2 tsp of salt
  • 1 tsp of black pepper
  • 1 tsp of garlic powder
  • 4 tbsps nutritional yeast
  • 2 tbsp of tapioca flour
  • Cooked pasta

Instructions:

  1. Preheat oven to 375 degrees
  2. Cube butternut squash and toss with olive oil
  3. Place sliced onions, peeled garlic cloves, and butternut squash on a baking sheet and bake for 25-30 mins or until the squash is tender
  4. Add roasted veggies to a blender with the vegetable broth, plant milk, and seasonings
  5. Once everything is blended, add “cheese” sauce to a pot with the tapioca flour. Stir until the flour is mixed well with the sauce.
  6. Serve with pasta of choice!
