Almond Crusted Teriyaki Tofu

There’s nothing like takeout at home - especially when it tastes as good as this Teriyaki Tofu with crushed Blue Diamond Wasabi & Soy Sauce flavored Almonds

I’ve said it before and I’ll say it again, I love my own cooking. It’s just something about knowing I put some extra love in the meals I make. This time, I teamed up with Blue Diamond to spice up my weeknight dinner and upcoming holiday menu item by adding their Wasabi & Soy Sauce almonds to my tofu.

Now, although I served the tofu with rice and broccoli, these are without a doubt going on my holiday dinner menu. The tofu bites paired with the almonds will make the perfect appetizer while we wait for dinner to finish. I am even planning to serve the almonds on a holiday-themed charcuterie board.

The ingredients for this dish are:

Super/Extra Firm Tofu

Blue Diamond Wasabi & Soy Sauce flavored almonds 

Olive Oil

Soy Sauce

Teriyaki Sauce

Cooked Rice

Cooked Broccoli

Now let’s talk about tofu. Oftentimes, it gets a bad wrap but I actually enjoy tofu! You just have to know how to cook it correctly and dress it up a bit. I always freeze my tofu and then thaw it out and squeeze the excess water before cooking with it. That’s the trick! 

Next, you should marinate the tofu and generously season it. I prefer to bake, air fry, or cook my tofu on a stovetop.

If you’re up for it, give this teriyaki bowl a try, and don’t forget to add the crushed almonds after you toss it in the sauce! You will absolutely love it! And if you’re like me, add the almonds to your holiday-themed charcuterie board!

Ingredients:

  • One package of super/extra firm tofu
  • 1 cup of Blue Diamond Wasabi & Soy Sauce flavored Almonds
  • 1 ½ tbsp olive oil
  • 2 tbsps soy sauce
  • 1 cup of Teriyaki Sauce
  • Cooked Rice
  • Cooked Broccoli

Instructions:

  1. Completely freeze the super/extra firm tofu at least 12 hours before you plan to cook with it
  2. Once ready to cook the tofu, thaw it out and squeeze out the excess water
  3. Preheat oven to 400 degrees
  4. Cut the tofu into cubes and toss with olive oil and soy sauce
  5. Place tofu on a baking sheet and bake in the oven for 30-40 minutes
  6. While to tofu bakes, add the Blue Diamond Wasabi & Soy Sauce Almonds to a bag and crush them into very small pieces
  7. Once the tofu has finished cooking, let cool and then coat with teriyaki sauce. Next, coat the tofu bites with the crushed almonds and serve with rice and broccoli
