Sweet Chipotle Crispy Tofu

 

Ingredients:

-Chipotle sauce Ingredients:

  • 1/2 cup of chipotle peppers in adobo sauce
  • 2 tbsp of sautéed shallots (optional)
  • 1 tsp of vegetable base
  • 2 garlic cloves
  • 1 tbsp of agave (or your preferred sweetener)
  • 1/4 cup of water (add more in 1 tbsp increments until
  • The juice of 1/2 a lime
  • salt + pepper to taste

- Tofu Ingredients:

  • 16 oz Firm tofu (one block)
  • 2 tbsp of garlic powder
  • 1 tbsp of onion powder
  • ¼ tsp of black pepper
  • 2 tbsp of low-sodium soy sauce
  • 1 tbsp of olive oil
  • ¼ cup of cornstarch

- Remaining ingredients:

  • ¼ cup of coconut Sugar
  • 1 tbsp of vegan butter

Directions:

  1. To a blender, add Canned chipotle peppers in adobo sauce, sautéed shallots, vegetable base, garlic, agave, water, and lime juice. Set this aside.
  2. In a bowl, add the bite-sized pieces of firm tofu, garlic powder, onion powder, black pepper, low-sodium soy sauce, olive oil, and cornstarch. Add to an air fryer and fry for 12 minutes at 390 degrees.
  3. In a skillet, add the vegan butter. Once melted, add ½ cup of the adobo sauce blend and the coconut sugar. Stir until combined. Now add in the crispy air-fried tofu and combine until each piece is coated with the sauce. Serve over cilantro lime rice. Garnish with more fresh cilantro and sliced limes.
