Buffalo Jackfruit Nachos

Ingredients:

  • Tortilla chips
  • 2 cans of jackfruit in brine
  • ¼ cup of dairy-free cream cheese
  • ¼ cup of dairy-free sour cream
  • ¼ cup of buffalo sauce
  • 1 tbsp nutritional yeast
  • 3 tbsps olive oil
  • Salt and pepper
  • Toppings: buffalo sauce, tomatoes, green onions, dairy-free ranch dressing

Instructions:

  1. Preheat oven to 400 degrees
  2. Drain and rinse jackfruit. Squeeze excess water out with a kitchen towel or napkin
  3. Drizzle with olive oil and season with salt and pepper
  4. When oven is hot, transfer jackfruit to a baking dish and bake for 25 minutes
  5. In the meantime, add the cream cheese, nutritional yeast, sour cream, and buffalo sauce to a mixing bowl and combine well
  6. When the jackfruit finishes baking (it should be firm and a bit crispy), add it to an oiled over medium heat. Add in the buffalo sauce mix and cook for 5 minutes, stirring occasionally. The sauce should begin to cook down a bit
  7. Assemble the nachos and add your favorite toppings!
