Buffalo Jackfruit Nachos
Ingredients:
- Tortilla chips
- 2 cans of jackfruit in brine
- ¼ cup of dairy-free cream cheese
- ¼ cup of dairy-free sour cream
- ¼ cup of buffalo sauce
- 1 tbsp nutritional yeast
- 3 tbsps olive oil
- Salt and pepper
- Toppings: buffalo sauce, tomatoes, green onions, dairy-free ranch dressing
Instructions:
- Preheat oven to 400 degrees
- Drain and rinse jackfruit. Squeeze excess water out with a kitchen towel or napkin
- Drizzle with olive oil and season with salt and pepper
- When oven is hot, transfer jackfruit to a baking dish and bake for 25 minutes
- In the meantime, add the cream cheese, nutritional yeast, sour cream, and buffalo sauce to a mixing bowl and combine well
- When the jackfruit finishes baking (it should be firm and a bit crispy), add it to an oiled over medium heat. Add in the buffalo sauce mix and cook for 5 minutes, stirring occasionally. The sauce should begin to cook down a bit
- Assemble the nachos and add your favorite toppings!
