Buffalo Chickpea Wraps
This recipe makes three servings.
Ingredients:
- 1 can of chickpeas, drained and rinsed
- 1/4 cup of vegetable broth
- 1/4 cup of buffalo sauce
- 1/4 tsp of black pepper
- 3 burrito wraps
- Vegan ranch
- Lettuce
- Sliced tomatoes
- Sliced onions
- Vegan shredded cheddar cheese
Instructions:
- Drain and rinse the canned chickpeas
- Next, add them to an oiled skillet over medium heat. Season with salt and pepper and cook for 3-5 minutes
- Add in the buffalo sauce and vegetable broth. Combine well and let simmer for 7-10 minutes or until the liquid has been absorbed. The chickpeas should be tender and flavorful
- Assemble the buffalo chickpea wrap by spreading vegan ranch on the tortilla followed by lettuce, tomatoes, onions, and shredded cheese
- Serve with your choice of sides and enjoy!
