Buffalo Chickpea Wraps

 

This recipe makes three servings.

Ingredients:

  • 1 can of chickpeas, drained and rinsed
  • 1/4 cup of vegetable broth
  • 1/4 cup of buffalo sauce
  • 1/4 tsp of black pepper
  • 3 burrito wraps
  • Vegan ranch
  • Lettuce
  • Sliced tomatoes
  • Sliced onions
  • Vegan shredded cheddar cheese

Instructions:

  1. Drain and rinse the canned chickpeas
  2. Next, add them to an oiled skillet over medium heat. Season with salt and pepper and cook for 3-5 minutes
  3. Add in the buffalo sauce and vegetable broth. Combine well and let simmer for 7-10 minutes or until the liquid has been absorbed. The chickpeas should be tender and flavorful
  4. Assemble the buffalo chickpea wrap by spreading vegan ranch on the tortilla followed by lettuce, tomatoes, onions, and shredded cheese
  5. Serve with your choice of sides and enjoy!
