Berry & Banana Oatmeal

 

This recipe makes two servings. Double or triple the ingredients for more servings.

Ingredients:

  • 1 cup of rolled oats
  • 1 1/2 - 2 cups of plant milk (I used oat and coconut milk)
  • 4 tbsp of brown sugar/sugar substitute
  • 1/2 tsp of cinnamon
  • 1 tsp of vanilla extract (optional)
  • A pinch of salt
  • 1/2 cup of frozen and fresh berries
  • 2-4 tbsp of water
  • 1 tsp cornstarch (optional)
  • Toppings: sliced banana, walnuts pieces

Instructions:

  1. Add the plant milk, rolled oats, 2 tbsps of the brown sugar/sweetener, vanilla extract, cinnamon, and salt to a saucepan over low-medium heat. Stir until all ingredients are mixed well, and let simmer over low heat for 5-7 minutes. Stir occasionally
  2. In a small bowl, combine the water and the cornstarch. Set aside
  3. In a separate pot, add in the frozen fruit, 2 tbsp of the brown sugar/sweetener, and the 2 tbsp of water and cornstarch mix
  4. Stir until the liquid has begun to thicken and resembles syrup. Add the remaining tbsp of water if the mixture is too thick
  5. Once the oatmeal has reached your desired consistency, immediately transfer it to a bowl. Top with sliced bananas, the berry syrup, and walnut pieces
