Berry & Banana Oatmeal
This recipe makes two servings. Double or triple the ingredients for more servings.
Ingredients:
- 1 cup of rolled oats
- 1 1/2 - 2 cups of plant milk (I used oat and coconut milk)
- 4 tbsp of brown sugar/sugar substitute
- 1/2 tsp of cinnamon
- 1 tsp of vanilla extract (optional)
- A pinch of salt
- 1/2 cup of frozen and fresh berries
- 2-4 tbsp of water
- 1 tsp cornstarch (optional)
- Toppings: sliced banana, walnuts pieces
Instructions:
- Add the plant milk, rolled oats, 2 tbsps of the brown sugar/sweetener, vanilla extract, cinnamon, and salt to a saucepan over low-medium heat. Stir until all ingredients are mixed well, and let simmer over low heat for 5-7 minutes. Stir occasionally
- In a small bowl, combine the water and the cornstarch. Set aside
- In a separate pot, add in the frozen fruit, 2 tbsp of the brown sugar/sweetener, and the 2 tbsp of water and cornstarch mix
- Stir until the liquid has begun to thicken and resembles syrup. Add the remaining tbsp of water if the mixture is too thick
- Once the oatmeal has reached your desired consistency, immediately transfer it to a bowl. Top with sliced bananas, the berry syrup, and walnut pieces
