Easy Spicy-Maple Breakfast Burrito
People are always on the hunt for easy but delicious vegan/plant-based breakfast ideas! I am one of those people because I am all about simplicity but even more about flavor.
There is nothing better than making a delicious breakfast, like these burritos, in less than 10-12 minutes. Especially if you are consistently busy during the week.
This recipe is simple and requires less than 10 ingredients - including the seasonings.
Tortilla wrap
Meatless Sausage
Plant-based egg
Spinach
Onions
Maple syrup
Italian seasoning
Cayenne pepper
Salt
Optional: Dairy-free cheese
These burritos make for great meal prep during the week. I like to make 4-5 of them on Sunday and place them in the freezer them until Iām ready to eat them.

Ingredients:
- 4 large tortilla wrap
- 4 plant-based sausages ( I used Beyond Meat's Brats Sausage)
- 3 cups of spinach
- 1 cup of diced onions
- 1 1/2 cup of liquid vegan egg ( I used JUST egg)
- 3 tbsp maple syrup
- Italian seasoning, cayenne pepper, salt to taste
- Optional: dairy-free cheddar cheese (find my dairy-free cheese recommendations here)
Instructions:
- In a large skillet, cook the breakfast sausage. Add in the maple syrup and seasonings. Set aside in a bowl once finished
- In the same skillet, cook the spinach and onions until tender. Season with salt and pepper
- Once the veggies are tender, add in the liquid vegan egg and scramble until done. Adding more salt and pepper if needed
- Lay out a tortilla wraps and layer with the plant-based egg, veggies, spicy maple breakfast sausage and diary-free cheese
- Serve with dairy-free sour cream, salsa, and/or hot sauce
