Creamy Cajun Pasta

Ingredients:

  • 2 cups of uncooked penne pasta
  • 1 ⅔ cup of oatmilk
  • 1 ½ cup of sliced vegan Italian sausage
  • 1 cup of sliced baby Bella mushrooms
  • 1 red bell pepper
  • 1 green bell pepper
  • ½ of a white onion, sliced
  • 2 tsp of lemon juice
  • ½ cup of vegetable broth
  • 3 tbsps of cajun seasoning (or more for extra spice)
  • 1 tbsp of garlic powder
  • 1 tsp of black pepper
  • 2 tsp of Himalayan salt
  • 1 tsp smoked paprika

Instructions:

  1. Saute vegan Italian sausage in a skillet. Set aside once done
  2. In the same skillet, saute mushrooms, peppers, and onions with cajun seasoning, garlic powder, smoked paprika
  3. Add in uncooked penne pasta, oatmilk, veggie broth, lemon juice and mix well. Cover with a lid and reduce heat to low. Let simmer for 30 minutes
  4. With 10 minutes left, remove the lid and add in 1 cup of dairy-free parmesan cheese and stir. Let pasta cook uncovered for remaining minutes
  5. After the pasta has finished cooking, add-in cooked sausage and serve with additional dairy-free parm
