Creamy Cajun Pasta
Ingredients:
- 2 cups of uncooked penne pasta
- 1 ⅔ cup of oatmilk
- 1 ½ cup of sliced vegan Italian sausage
- 1 cup of sliced baby Bella mushrooms
- 1 red bell pepper
- 1 green bell pepper
- ½ of a white onion, sliced
- 2 tsp of lemon juice
- ½ cup of vegetable broth
- 3 tbsps of cajun seasoning (or more for extra spice)
- 1 tbsp of garlic powder
- 1 tsp of black pepper
- 2 tsp of Himalayan salt
- 1 tsp smoked paprika
Instructions:
- Saute vegan Italian sausage in a skillet. Set aside once done
- In the same skillet, saute mushrooms, peppers, and onions with cajun seasoning, garlic powder, smoked paprika
- Add in uncooked penne pasta, oatmilk, veggie broth, lemon juice and mix well. Cover with a lid and reduce heat to low. Let simmer for 30 minutes
- With 10 minutes left, remove the lid and add in 1 cup of dairy-free parmesan cheese and stir. Let pasta cook uncovered for remaining minutes
- After the pasta has finished cooking, add-in cooked sausage and serve with additional dairy-free parm
