Mango Sticky Oats

Ingredients:

  • 1/2 cup rolled oats (or more for thicker oats)
  • 1 scoop protein powder (vanilla works best. here are my plant protein powder recommendations)
  • 1 cup water
  • 1/2 cup light or full fat coconut milk (plus extra for topping)
  • 1 tsp vanilla extract
  • A pinch of salt
  • 1 tbsp maple syrup
  • 1/2 mango, sliced
  • White and black sesame seeds for garnishing

Instructions:

  1. Prepare the liquid base: In a small saucepan, combine the water, coconut milk, maple syrup, and vanilla extract. Bring the mixture to a gentle simmer over medium heat.
  2. Mix dry ingredients: While waiting for the liquid to simmer, whisk together the rolled oats and protein powder in a small bowl until well combined.
  3. Cook the oats: Once the liquid is simmering, add the oat-protein mixture to the saucepan. Stir immediately to prevent clumping. Cook for 3-4 minutes, stirring frequently, until the oats begin to soften and the mixture starts to thicken.
  4. Finish cooking: Reduce the heat to low and continue cooking for another 2-3 minutes, stirring occasionally, until the oats reach your desired consistency and the mixture is smooth and creamy. Add a pinch of salt and more coconut milk or water if desired.
  5. Let cool slightly: Transfer the oat mixture to a serving bowl and allow it to cool slightly for about 2 minutes. This helps the oats set up to the perfect sticky consistency.
  6. Add toppings: Arrange the sliced mango on top of the oats in an attractive pattern. Drizzle with additional coconut milk.
  7. Garnish and serve: Sprinkle generously with white and black sesame seeds. Serve immediately while still warm.
