Brown Sugar Cinnamon Apple Pancakes

Brown Sugar Cinnamon Pancake Ingredients:

  • 1 cup of self-rising or all-purpose flour
  • 1 cup of almond milk
  • 1/4 tsp of salt
  • 1 tbsp of brown sugar or brown sweetener
  • 1 tbsp of baking powder (1/2 tbsp if using self-rising)
  • 1 1/2 tsp of cinnamon
  • 1 tsp of vanilla extract
  • Topping: dairy-free butter, caremalized apples, and maple syrup

Caramelized Apple Ingredients:

  • 2 apples, diced
  • 2 tsp of coconut oil
  • 2 tsp of brown sugar or brown sweetener
  • 1 tsp of cinnamon

Instructions:

  1. In a pot over medium heat, add the coconut oil. Once hot, add in the diced apples, brown sugar/sweetener, and cinnamon. Reduce heat to low-medium and bring to a low simmer for about 7 minutes.
  2. While the apples simmer, combine all of the pancake ingredients in a bowl (start with the dry ingredients first)and let sit for 5 minutes (important step)
  3. While the batter sits, check on the apples. By now they should be tender and caramelized.
  4. In a buttered skillet over medium heat, add 1/4 - 1/2 cup scoop of the pancake batter. Cook on each side for 2 minutes or until golden with crispy edges because duhhh. The edges have to be crispy.
  5. Top with butter, the caramelized apples, and syrup!
  6. Lastly, pat yourself on the back because YOU DIDDD THAT
