Air-fried okra and peppers

 

Ingredients:

  • 12oz of fresh okra
  • 2 cups of sliced mini sweet peppers
  • 2-3 tbsp of olive oil
  • 1 tbsp of onion powder
  • 2 tbsp of garlic powder
  • 2 tsp of smoked paprika
  • 2 tsp of dried parsley
  • 1 tbsp of coconut sugar (1-2 tsp of using brown sugar)
  • Salt and pepper to taste

Directions:

  1. After you clean the okra and peppers, cut them into bite sized pieces.
  2. In a bowl, coat the okra and peppers with olive oil, onion and garlic powder, smoked paprika, dried parsley, sugar, salt, and black pepper.
  3. Transfer half of the okra and peppers to the air fryer and fry for 15 minutes on 400 degrees. Repeat with the remaining half.
  4. Serve as a side dish or a snack
