Vegan Ricotta Toast - Two Ways

 

Ingredients:

  • Vegan brioche, sourdough, or your choide of bread, sliced
  • 2 tbsp of vegan ricotta (per slice of bread)

Berry ricotta toast

  • Sliced strawberries
  • Blueberries, halved
  • Optional: 1/2 tsp of agave and fresh basil, roughly chopped

Avocado ricotta toast

  • Sliced avocado
  • Cherry tomatoes, halved
  • Pickled onions
  • Red pepper flakes, black pepper, and salt to taste

Directions:

  1. Toast the bread
  2. Spread the vegan ricotta on the slice of bread and add your desired toppings listed above

Tips/Notes:

* Be sure to shake it up each time you decide to use it because separation does occur

* You can save the cashew pulp to use in baked goods

*If you are planning to cook/heat the cashew milk, watch it closely to avoid overheating which can cause clumps
