Easy Sausage and Farro Skillet

This Sausage and Farro Skillet was soooo delicious and extremely easy to make! It’s a perfect dish to make for family, friends, or to enjoy for yourself.

I have been all about the quick and easy meals. You know what I mean? The ones that don’t require too much effort but are still packed with flavor? Yeah, those kinds of meals.

This Sausage and Farro Skillet meal was just that - delicious, easy to make, and quick!

If you are not familiar with farro, here’s what you need to know. Farro is known as “the mother of all wheat.” Organic farro grains are a good source of iron and plant-based protein - which is something I am all for! It is also an alternative to risotto.

Bob’s Red Mill organic farro grains are very lightly scratched, as is traditional, to allow for a faster cooking time and to encourage the release of their starches during cooking.

For this dish, you will need:

Bob’s Red Mill Organic Farro

Vegan Sausage (or your preferred choice of protein

Green bell pepper

Shallots

Green onions

Vegetable broth

Salt

Black Pepper

Garlic powder

Onion powder

Fresh parsley

Cherry tomatoes, halved (optional)

When making one-pot or one-skillet meals, I prefer to cook my vegan meat first and set it aside before adding all of the remaining ingredients to the skillet or pot. This helps ensure the “meat” does not soften while simmering with the other ingredients.

You may be wondering what does Bob’s Red Mill Organic Farro tastes like? Well, imagine larger pieces of brown or white rice and slightly chewy. It is so delicious and can be used in pasta salad, buddha bowls, as a side dish, and even risotto.

Please note that the cooking times of farro may vary. This recipe was developed specifically for Bob’s Red Mill Organic Farro. The recommended cooking time is 30 minutes.

Sausage and Farro Skillet Ingredients:

  • 1 cup of Bob’s Red Mill Organic Farro
  • 4 vegan sausages (or your preferred choice of protein)
  • 1 green bell pepper, diced
  • 2 shallots, sliced
  • 2 green onions, sliced
  • 3 1/4 cup of vegetable or no-chicken broth
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • Fresh parsley (for topping)
  • 1/2 cup of cherry tomatoes, halved (optional)
  • Olive oil for cooking

Instructions:

  1. Slice the vegan sausages into round 1/2 inch thick pieces. In a large non-stick skillet, cook the sausages according to the package directions. Once finished, remove from skillet
  2. In the same skillet, over low-medium heat, add in a small amount of olive oil ~ 1-2 tsp. Once hot, add in the sliced shallots, diced green bell peppers, and green onions. Cook until fragrant
  3. While the veggies cook, add 1 cup of Bob’s Red Mill Organic Farro to a bowl and rinse clean with water. Add the farro to the skillet with the shallots, bell peppers, and green onions
  4. Next, add in 3 1/4 cup of vegetable or no-chicken broth along with 3/4 tsp salt, 1/2 tsp black pepper, 1 tbsp garlic powder, and 1 tbsp onion powder. Adjust the heat to medium and let simmer, uncovered for 25-30 minutes or until broth has been absorbed. Stir occassionally. (Please note that farro cooking times can vary. If using Bob's Red Mill, 30 minutes is the recommended cooking time)
  5. After 25-30 minutes, the broth should be absorbed. If not, cook for 3-5 additional minutes
  6. Add in the cooked vegan sausage and sliced cherry tomatoes (optional)
  7. Top with fresh parsley
  8. Lastly, pat yourself on the back because YOU DIDDDD THAT
