"Seafood" Stuffed Bell Peppers
Ingredients:
- 2-3 vegan crab cakes (not fried). Recipe here
- 2 medium sized bell peppers
- 1/2 celery stalk, diced
- 1/4 cup of vegetable broth
- 2 tsps of Olive oil - to rub on the outside of the bell peppers
- 1 1/2 tbsps of bread crumbs
- Optional: 2 tbsps of liquid plant based egg (I used JUST egg)
Instructions:
- Prepare vegan crab cakes using my recipe here .
- Refrigerate the crab cake mixture overnight
- The next day, remove crab cakes from the refrigerator and remove the seaweed wrap. Add in diced celery
- Preheat oven to 375 degrees
- Cut bell peppers in half, remove seeds and rub the outside of each pepper with olive oil
- Fill the peppers with the crab cake mix, vegan egg and sprinkle bread crumbs on top,
- Place into an oven safe baking dish
- Add vegetable broth to the bottom of the baking dish
- Cover with foil and bake for 15 minutes
- Remove foil and bake for an additional 15 minutes or until peppers are tender
