Vegan Chicken Fried Rice

Ingredients:

  • 2 diced vegan chicken patties
  • 1 tbsp olive oil
  • 2 cups of cooked white rice
  • 2 vegan eggs (1/3 cup of egg)
  • 1 ¼ cup of peas and carrots
  • ¼ cup of chopped green onions
  • 5 tbsp soy sauce
  • 2 tbsp vegan butter
  • 2 tbsp garlic powder
  • 2 tsp Salt
  • 2 tsp Pepper
  • 1 tbsp sesame oil
  • Large skillet

Instructions:

  1. Cook rice per packaged instructions (I recommend cooking the rice the night before)
  2. Add olive oil to skillet over medium heat
  3. Add diced vegan chicken to skillet and cook until slightly brown. Move to side of skillet
  4. In the same skillet, add peas, carrots and green onions. Saute for 3 minutes and move next to vegan chicken
  5. Add vegan egg and let sit for 45 seconds
  6. Using a spatula, scramble vegan egg
  7. Combine chicken, peas, carrots, green onions and vegan egg
  8. Add garlic powder, salt and pepper to the mix
  9. Add in cooked rice, soy sauce and sesame oil
  10. Top with additional green onions and serve warm
