Dairy Free Jalapeno Poppers

Ingredients:

  • 8 jalapenos (sliced down the middle with seeds and pith removed)
  • 4 oz of vegan cream cheese
  • 1/4 cup of vegan cheddar cheese
  • 1/4 cup of chopped green onions
  • 1 tbsp of minced garlic
  • 1 tsp of salt
  • 1 tsp of pepper
  • 1 tbsp of nutritional yeast
  • Vegan bacon (bacon seasoning or vegan bacon bits)
  • Bread crumbs

Instructions:

  1. Preheat oven to 400 degrees
  2. Slice jalapenos down the the middle
  3. Using a knife or fork, remove the seeds and pith from inside of each jalapeno
  4. Spray jalapenos with oil and lay with skin side down on foil or parchment paper
  5. In a bowl, combine all other ingredients except for bread crumbs and vegan bacon
  6. Fill each jalepeno with cream cheese mixture until you run out of filling
  7. Top with bread crumbs and vegan bacon
  8. Bake for 20 minutes or until jalapenos have softened
  9. Sprinkle cheese on top and serve warm
