Dairy Free Jalapeno Poppers
Ingredients:
- 8 jalapenos (sliced down the middle with seeds and pith removed)
- 4 oz of vegan cream cheese
- 1/4 cup of vegan cheddar cheese
- 1/4 cup of chopped green onions
- 1 tbsp of minced garlic
- 1 tsp of salt
- 1 tsp of pepper
- 1 tbsp of nutritional yeast
- Vegan bacon (bacon seasoning or vegan bacon bits)
- Bread crumbs
Instructions:
- Preheat oven to 400 degrees
- Slice jalapenos down the the middle
- Using a knife or fork, remove the seeds and pith from inside of each jalapeno
- Spray jalapenos with oil and lay with skin side down on foil or parchment paper
- In a bowl, combine all other ingredients except for bread crumbs and vegan bacon
- Fill each jalepeno with cream cheese mixture until you run out of filling
- Top with bread crumbs and vegan bacon
- Bake for 20 minutes or until jalapenos have softened
- Sprinkle cheese on top and serve warm
