Chili Garlic Lime Chickpea Caesar Salad

Ingredients:

  • 1 cup of canned chickpeas
  • 1 1/2 tbsp chili powder
  • 3/4 tbsp garlic powder
  • 1 tsp of salt
  • Juice of 1 lime
  • 3 1/2 tbsp of nutritional yeast
  • 1/3 cup of dairy free caesar salad dressing
  • 2 tbsp olive oil
  • 3 cups of romaine lettuce or kale
  • Toppings: croutons

Instructions:

  1. Preheat oven to 400 degrees
  2. Drain and rinse chickpeas
  3. In a bowl, mix together rinsed chickpeas, lime juice, salt, chili and garlic powder and olive oil
  4. Place coated chickpeas on cookie sheet and bake for 30 minutes or until crispy
  5. Assemble salad by mixing together the salad dressing, greens, and 3 tbsp of nutritional yeast
  6. Top with roasted chickpeas, croutons and remaining nutritional yeast
