Chili Garlic Lime Chickpea Caesar Salad
Ingredients:
- 1 cup of canned chickpeas
- 1 1/2 tbsp chili powder
- 3/4 tbsp garlic powder
- 1 tsp of salt
- Juice of 1 lime
- 3 1/2 tbsp of nutritional yeast
- 1/3 cup of dairy free caesar salad dressing
- 2 tbsp olive oil
- 3 cups of romaine lettuce or kale
- Toppings: croutons
Instructions:
- Preheat oven to 400 degrees
- Drain and rinse chickpeas
- In a bowl, mix together rinsed chickpeas, lime juice, salt, chili and garlic powder and olive oil
- Place coated chickpeas on cookie sheet and bake for 30 minutes or until crispy
- Assemble salad by mixing together the salad dressing, greens, and 3 tbsp of nutritional yeast
- Top with roasted chickpeas, croutons and remaining nutritional yeast
