Pimiento, Golden Beet and "Cheese" Bruschetta
Ingredients:
- 1/2 french bread baguette, sliced 3/4 inch pieces
- Vegan cheese spread (I used Live Cuisine)
- Diced pimientos in a jar
Roasted Golden Beets
- 3 medium-sized golden beets, washed
- 1 1/2 tbsps of olive oil
- 1/2 tbsp brown sugar
- 1 tsp red pepper flakes
- 1/2 tsp sea salt
- 1/2 tsp pepper
Instructions:
- Preheat oven to 375 degrees F
- Slice or dice golden beets
- Add olive oil, brown sugar, red pepper flakes, salt and pepper in a small bowl and combine
- On a baking sheet, lay out beets. Drizzle oil mixture evenly over beets
- Place in oven and roast for 40 minutes or until tender
- 10 minutes before beets are finished, slice french bread into 3/4 inch thick pieces
- Add sliced bread to oven and bake until bread is toasted
- Remove both the beets and bread from oven
- Add 1 tbsp of vegan cheese spread, followed by golden beets, and a few pieces of pimiento to each piece of toasted bread
- Optiopal: Sprinkle sea salt and parsley and/or bee-free honey over toasted bread and serve warm
