Pimiento, Golden Beet and "Cheese" Bruschetta

Ingredients:

  • 1/2 french bread baguette, sliced 3/4 inch pieces
  • Vegan cheese spread (I used Live Cuisine)
  • Diced pimientos in a jar

Roasted Golden Beets

  • 3 medium-sized golden beets, washed
  • 1 1/2 tbsps of olive oil
  • 1/2 tbsp brown sugar
  • 1 tsp red pepper flakes
  • 1/2 tsp sea salt
  • 1/2 tsp pepper

Instructions:

  1. Preheat oven to 375 degrees F
  2. Slice or dice golden beets
  3. Add olive oil, brown sugar, red pepper flakes, salt and pepper in a small bowl and combine
  4. On a baking sheet, lay out beets. Drizzle oil mixture evenly over beets
  5. Place in oven and roast for 40 minutes or until tender
  6. 10 minutes before beets are finished, slice french bread into 3/4 inch thick pieces
  7. Add sliced bread to oven and bake until bread is toasted
  8. Remove both the beets and bread from oven
  9. Add 1 tbsp of vegan cheese spread, followed by golden beets, and a few pieces of pimiento to each piece of toasted bread
  10. Optiopal: Sprinkle sea salt and parsley and/or bee-free honey over toasted bread and serve warm
