Sheet Pan Sausage, Lentil, and Veggie Meal

 

This is the perfect weeknight meal!

Here’s everything you will need to make this delicious sheet pan meal:

For the Sheet Pan Meal:

  • Plant-based sausages - I used the brand Field Roast

  • Red bell pepper

  • Green bell pepper

  • Red onion

  • Asparagus

  • Canned lentils - You can also use dried lentils. Just be sure to soak and cook them prior to adding to this meal

  • Olive oil

  • Salt and black pepper

  • Garlic powder

  • Coriander

  • Dried thyme

For the Garlicky Miso Tahini Dressing:

  • Yellow miso paste - You can find this at Asian Markets and most grocery stores. You can also order it here

  • Organic Tahini paste - This is a seseme seed blend and can be found at most grocery stores. You can also order it here.

  • Garlic powder

  • Garlic cloves

  • Black pepper

  • Fresh parsley, optional

  • Hot water

This makes roughly 2 servings depending on you decide to portion it out!

Ingredients:

  • 2 plant-based sausages, sliced
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 red onion, chopped
  • Asparagus, trimmed and cut into bite-sized pieces
  • 1/2 cup canned lentils, drained and rinsed
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 3/4 tsp garlic powder
  • 1/2 tsp coriander
  • 1/2 tsp dried thyme

For the Garlicky Miso Tahini Dressing

  • 1 heaping tbsp yellow miso paste
  • 1 tbsp tahini paste
  • 1/2 tsp garlic powder
  • 1 garlic clove, grated
  • 1/8 tsp black pepper
  • 2 tsp fresh parsley, roughly chopped
  • 3-4 tbsp hot water

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. On a large baking sheet, combine chopped bell peppers, onion, asparagus, and drained lentils.
  3. Slice the plant-based sausages into bite-sized pieces and add them to the baking dish.
  4. Drizzle olive oil over the sausage and vegetable mixture. Sprinkle with salt, black pepper, garlic powder, coriander, and dried thyme. Toss everything together until well coated.
  5. Place the baking sheet in the preheated oven and bake for 30 minutes or until the veggies are tender and the sausages are cooked through, flipping halfway through the cooking time for even browning.
  6. While the sheet pan meal is baking, prepare the garlicky miso tahini dressing. In a small bowl, whisk together miso paste, tahini paste, garlic powder, grated garlic, black pepper, and chopped parsley. Gradually add hot water, 2 tablespoons at a time, until you reach your desired consistency. Set aside.
  7. Once the sheet pan meal is cooked, remove it from the oven. Serve the sausage, lentil, and veggie mixture over cooked rice or enjoy it on its own.
  8. Drizzle the garlicky miso tahini dressing over the sheet pan meal just before serving.
